Kriek beer is often known as a sweet cherry beer, where the 'sweet' is often paramount. The modern kriek beer can hardly be compared to the classic kriek beer. This classic or original kriek is basically a lambic beer (sour beer of wild fermentation), to which Belgian sour cherries are added. These cherries are completely broken down and incorporated into the beer. These sour cherries combine fantastically with the sour tones of the lambic beer.
A good quality kriek can be stored for at least 5 to 10 years, and sometimes even longer. When they are fresh, the hard acids and tannins of the wood come out more. But give them a few years to mature, and these harsh notes disappear, giving way to even more complex notes of red fruit, and often a wine-like character.
